      Select steaks that are 1½ inches thick for optimal searing

      Bring thick cuts of meat to room temperature before grilling

      Allow the pan or grill pan to reach a scorching temperature before grilling 2 minutes on each side. Then, transfer to a 400°F oven until cooked through.
